Gluten Free Eating makes a Difference!


Morning Everyone! It’s my rest day and don’t think for one minute that I am not happy to see it. I would rather sleep in every morning but I don’t. Period!

Last night I was hungry! I made pan grilled chicken with sauteed onions, peppers, mushrooms and then made some quick guacamole with scallions, cilantro, avocado, and some lime juice. But I was still hungry — so I had some dark chocolate and then had an apple with some almond butter — Then I said — I better go to bed before I dip into the ice cream!!

Today makes it 4 weeks into my new approach to eating — I still feel great and am now a firm believer in eating this way. The difference in your body and your overall mood is amazing! Someone asked me why am I doing this –is it to lose weight or for overall health.. While I do want to lose a few more lbs, I really did this because I wanted to see what all the fuss was about. I have always been one of those people who was always tired. Run down even though I worked out and ate fairly well — You ask me, I would have told you I was tired.  I have in the past talked to my dr about it –really confused as to why –he said some people are just that way. Busy lifestyle, stress, genetics –I said I don’t feel like I think I should feel.

But day 7 of eating this way with no gluten/wheat — I felt that overall fatigue fog lift. I could literally feel the difference. Is it a coincidence? So not only does my body look different eating this way — my mood and energy level are where it should be. For an active, in shape women —

    Yesterday was my day 30, and I took stock in a post. I’m feeling pretty great and I can’t wait to see what happens with my body and performance in 2011.

  2. I lasted 5 days, until my family surprised me for my b-day…I haven’t climbed back on the wagon yet! I need to, I felt so much better than I do now!

    So happy you feel as great as you do…I definately think paleo is a great way to go!!!

  3. Eating a gluten free diet changed (and likely saved) my life. It’s going on three years gluten free for me and it’s amazing how much more energy I’ve had, how much better my skin is, how clearly I’m able to think. The list of benefits is enormous. But it wasn’t until I went fully paleo/primal that my body hit peak health. I can’t stop singing it’s praises.
