Bacon Pancake Dippers


Crisp up your favorite bacon. Make your favorite pancake batter from scratch or use a mix. I use Pamela’s Gluten Free Baking and Pancake Mix.
Bacon Pancake Dippers

Pour strips of batter on a griddle. Top with a piece of cooked bacon. Pour more batter over top to cover. Cook until golden on one side. Flip. Cook until golden on the other side. Serve warm if you can. I did put extra in the fridge and reheated them and they came out OK.

1499694_10151845571978741_540881674_nToday’s workout had an interesting twist from the normal – we did a bunch of agility/mobility work. I love that sort of stuff because I am not only balanced challenged but also when I have to think and move at the same time –yeah that’s tough for me too. Because I didn’t grow up athletic, I didn’t make any of those neurological connections that help with coordination and overall body awareness.  Have no fear – I’m learning them now. And they frustrate me and challenge me and make me laugh while I am doing them –and that’s how I know they are things I have to work on.

The hardest thing in the entire scheme was The Lateral Band Walk -putting a stretch band around your ankles and shuffling -trying to keep slack out of the band. Holy cow the burn that created was memorable.

Learning How to Eat Paleo


Busy day but I wanted to share a few things I think everyone should read and also just mention something that happened to me yesterday. I stopped in to Wegmans to pick up a few things and while I was heading towards the Gluten Free/Natural foods area – I noticed this woman who was furiously leafing through a gluten free cookbook, trying to make sense of what to buy and what was what.  I found out later her name – Marie and she is from South Africa.

She looked up at me and said – this stuff is so confusing and explained that her tween daughter is allergic to wheat, dairy and soy. Have you tried to find any sort of non-fresh food without one of those ingredients? Holy cow! And if you do, some of it tastes like crap! We got to talking about some stuff that I have used and I ended up walking with her through the natural foods section pointing out Larabars and a few other things that met her criteria. I also talked to her about looking into getting a dehydrator  – so she can make her own beef jerky and dried fruit and gave her some ideas for snacks. She was so thankful that I took the time and offered up my own experience – as I was saying goodbye, I gave her my blog info and my email and introduced myself.

Once she finds things that work for her and her family, it will definitely be an easy transition but I remember how daunting and hard it all felt at first. I was glad I could lend a hand!

Just being kind to another human who probably will not even realize – but what’s important is other people noticed. It didn’t take any effort at all — and he made someone else’s day just a little bit easier. That’s what I wish for everyone -to have people in their lives that make living just a little easier.  I am lucky to have people like that in my life regularly. Getting up early and heading to CrossFit is a joy because of the people there –supportive and the kind of people who believe in you sometimes more than you believe in yourself.

be kind to everyoneI have been thinking a lot about finding some mentors to help me explore  what will be next for me career wise. I have a ton of CrossFit mentors and just all around smart people who have a ton of experience in my life – but what I don’t have are some strong, professional women in marketing in my circle who I can learn from. That’s what I want to focus on — I know a lot of really smart women in marketing, but have not made any real effort to reach out, connect and learn from them.  This morning, I made a list of some of the people I want to talk with. I find that making a list helps me manage all the different stuff that needs to get done. For some reason, if I write it down – it’s concrete and will get done.

What particularly stuck out to me was the info about finding out what’s important to the people you want to help you. You gain influence by helping others reach their goals. This is so true in so many things. People want to know how it will benefit them or what do they get out of it.  See how you can help someone you admire and you are more likely to win them over and open up opportunities for learning on both sides.

Gluten Free Pumpkin Pancakes


Please keep in mind these pancakes are gluten free not Paleo!


2 cups Pamela’s G Free Pancake mix
2 eggs
2 tablespoons of olive oil
1.5 cups water

Mix that together…

pumpkinAdd 1 cup of pure pumpkin

Add some spices (experiment depending on your own taste preferences!)

1 teaspoon vanilla
1 teaspoon of cinnamon
A dash of nutmeg
A dash of allspice

Pre-heat your griddle with some butter and start cooking the batter!

For me, this mixture usually makes about 8-9 pancakes –depending on size.

I let them cool down and wrap two together with saran wrap and freeze them.
The kids grab a packet from the freezer in the morning, and re-heat. Voila!



So Time to Move On


I meant to get up this morning for my workout but the alarm was set for PM not AM! Doh! I will go tonight to mix things up!

Yesterday was quite a day — one where I win the Mother of the Year Award.

Got my dates mixed up and sent Nate to a camp he was not signed up for and HB arrived at her camp without all the necessary forms and materials. But guess what?? They survived and will live another day.

Hannah came home and said “Mom, you really need to read stuff and pay attention more. Everyone had their class forms and knew where they were going but me!” Summer can be one of the tougher times for a parent. Figuring out camp schedules, travel, vacations — getting daily camp bags packed. And add that to my already packed schedule — I get overwhelmed and make mistakes. It happens and kids survive.  But you would think it was the end of the world with Hannah sometimes. Nate was so nonchalant about it — funny how with some things, he just goes with the flow.

So this is now my fifth week at HighBar CrossFit and I am LOVING it. I have gotten stronger with their 8 week strength program, tried some new stuff, got some tweaking done on stuff I have previously done, met some new friends, and just feel great about my training again. Plus I have more time back — can take care of the things at home. I didn’t realize how much time I was devoting to CFI overall. It’s nice to have the quiet back in my life – there was too much disruption and drama at CFI on a regular basis in my opinion. It was SO time to move on…

Busy Busy Day


 castI took the day off to take Hannah to the orthopedist to have her wrist looked at — well she is now in an arm cast. I am sure the novelty of it all will wear off in a day or so. It will be a long four weeks for my baby.

Today was a rest day for me and I was more than happy to do it. I am so so sore.. mostly in my quads. I think it may be from rowing since I did a ton of that yesterday. But i will be back at it tomorrow…

3 sweet potato peeled and grated
8-10 tiger prawns/shrimps peeled
4 free range eggs
1/2 yellow onion chopped
Salt and pepper to taste
2 – 4 tbsp coconut oil for frying

Heat the coconut oil in a skillet on low to medium heat. Mix the sweet potato, eggs, onions and salt and pepper in a bowl. Take a handful of the mixture, form into a pancake then push one large shrimp on the center of the pancake. Fry shrimp face down for about 4 minutes on low to medium heat. Turn the pancake on the other side when the shrimp is cooked. Fry for another 2-3 minutes until it is cooked through.
