I found this recipe at R.A.W. Training. Sounds yummy & I’m going to attempt to make them soon! Let me know if you try it —
Easy Paleo Pumpkin Bars
Ingredients
15 oz can Organic Pumpkin
2 Eggs
1/3 cup Egg Whites (I used Egg Beaters “whites”)
1/3 cup Agave Nectar Amber
2 cups Almond Flour
1 tsp Pumpkin Pie Spice
1/2 tsp Baking Powder
1/4 tsp Salt (I used sea salt)
Directions
combine in blender/ food processor:1 can (15oz) pure pumpkin puree1/3 cup egg white2 large eggs1/3 cup agave nectarblend/pulse until whippedcombine in a bowl:2 cups almond flour1 tsp pumpkin pie spice (ginger, nutmeg, allspice)1/4 tsp sea salt1/2 tsp baking powderadd to blender and mixBake in a greased pan @ 350 degrees for 35 mins. (I put mine in a 9 x 13 pan so they were thinner and cooked them only about 30 min)

This recipe looks tasty, but one suggestion: use honey instead of agave nectar. That stuff is industrial garbage and YOU, fabulous lady, deserve so much better than that!
I mixed in about 1/4 cup of carob chips and topped with unsweetened coconut, they’re baking right now and it smells amaaaaazing.
